Tiramisu with Snacking Tomatoes

Breaking news: tiramisu has left the sweet side and gone savory with snacking tomatoes!

Ingredients

  • 250g Azura snacking tomatoes
  • 4 slices of sandwich bread
  • 250g mascarpone
  • 60g Parmigiano
  • 3 eggs
  • Basil (optional)
  • Pine nuts (optional)
  • Olive oil
  • Salt and pepper

Preparation

  • Step 1

    Preheat the oven to 180°C (350°F). Place the cherry tomatoes in an ovenproof dish, drizzle with olive oil, salt, and pepper, then roast for 25 minutes. Let cool.

  • Step 2

    Toast 2 slices of white bread and cut them into large cubes.

  • Step 3

    Mix mascarpone, Parmegiano, and egg yolks with some pepper. Whisk the egg whites until stiff and gently fold them into the mixture.

  • Step 4

    Layer the croutons in small glasses, add the roasted snacking tomatoes, then the mascarpone cream. Refrigerate for at least 4 hours.

  • Step 5

    When serving, feel free to decorate the glasses with snacking tomatoes, olive oil, basil, and pine nuts.
