A summer classic reinvented with snacking tomatoes.
Ingredients
- 500g Azura snacking tomatoes
- 2 bell peppers
- 1 cucumber
- 1 red onion
- Olive oil
- Sherry vinegar
- Salt and pepper
Preparation

Step 1
Preheat the oven to 180°C.

Roasted peppers: Place the bell peppers in an ovenproof dish and roast for 25 minutes, turning halfway through. Remove from the oven, cover, and let sit for 20 minutes. Peel and remove seeds.

Roasted snacking tomatoes: Place the snacking tomatoes in an ovenproof dish, drizzle with olive oil, salt, and pepper, then roast for 25 minutes. Let cool.

Chop the red onion, cucumber, and garlic, then blend everything together with the roasted snacking tomatoes and peppers.

Season with salt, pepper, olive oil, and sherry vinegar.

Refrigerate for at least 2 hours before serving.
